Steak
Bacon Wrapped Asparagus
Yield: 4 Servings

1 POUND ASPARAGUS, TRIMMED
8 SLICES THICK-CUT WOOD-SMOKED BACON
1/4 CUP OF BUTTER
JUICE OF 2 LIMES
KOSHER SALT

Preheat the oven to 350 degrees Fahrenheit.  In a large pot of water, blanch the Asparagus over medium-high heat for 2 to 3 minutes, or until the spears can just be pieced with a fork tine.  Remove, drain, and cool.
Partially cook the bacon in a skillet over medium heat.  Remove from heat and transfer bacon to a paper tower-lined plate to drain and cool.  Divide the Asparagus into four bunches and wrap each bunch with 2 pieces of bacon, folding the ends of the bacon under to secure.  Place in a foil-lined roasting pan, divide the butter by putting a smudge on each bundle of Asparagus tops, and pour the lime juice over the Asparagus.  Season with salt and bake for 5 to 6 minutes, or until the Asparagus reaches your desired tenderness.

*Instead of cooking in the oven, you may also cook the bacon wrapped Asparagus bunches on a grill, over medium heat for 5 to 6 minutes, or until it reaches your desired tenderness.
